Dabeli


         Dabeli is a famous Gujarati snack. It is basically called "Kutchi Dabeli". Dabeli literally means pressing. The buns are stuffed with spicy potato masala. Below is the recipe for it.




 
 
Preparation Time: 20 minutes
Cooking Time: 20 minutes

Ingredients:
 
  • Filling:
    • 4 boiled and mashed potatoes
    • 1 large onion finely chopped
    • 1 Tomato finely chopped
    • a pinch of asafetida
    • 3 tbsp dabeli masala (Normal red chilli powder will also do)
    • 1 tsp red chili powder
    • 2 tbsp oil
    • salt to taste
    • lemon juice

  • Dabeli Masala:
    • 1 red chilli
    • 1 tsp coriander (dhania) seeds
    • 12 mm. (1/2") stick cinnamon (dalchini)
    • 2 cloves (laung / lavang)
    • 1/4 tsp cumin seeds (jeera)

  • To serve:
    • 1 onion finely chopped
    • 1/2 cup peanuts roasted with red chilli powder & salt
    • 1/4 cup grapes cut into two
    • 1/2 cup chopped coriander leaves
    • 1/2 cup Sev
    • 1/2 cup fresh pomegranate seeds
     
  • Other ingredients: 
    • 15 burger buns
    • butter or oil for cooking 
 
 Method:
  • Dabeli Masala
    • Roast all the ingredients in a pan for 2 to 3 minutes.
    • Grind to a fine powder in a blender. Use as required.

  • For the filling:


    • Heat oil & butter in a pan.
    • Fry onions till translucent.
    • Add tomatoes to it
    • Add dabeli masala, red chilli powder & salt to it
    • Fry till tomatoes become soft.
    • Add mashed potatos, sugar & lemon juice
    • In a plate remove the filling mixture. Now garnish it with chopped onions, chopped grapes, pomegranate seeds, peanuts, sev, coriander leaves. Set aside.

  • Dabeli:
    • Make a cut in the bun.
    • Apply Red Chili-Garlic Chutney to one side & Tamarind Chutney to other side.
    • Fill the bun with a large spoon of garnished filling
    • Close it & shallow fry in butter on a hot tawa.
    • Serve hot !!
