Healthy Red Veg Cutlet


                  Veg Cutlets is a very common starter dish for parties. There are various versions of veg cutlet recipes available. But below is my version. Its nice bright red colored cutlets. They look so appealing to the eyes due to its red color. They are very tasty & Healthy at the same time !!! Just try it for your party & get appreciation from the guests. You can make it ahead of time for the party. Just warm it before serving !!
 
                  I have already shared a curd dip recipe. Make it along with these cutlets. The dip is just perfect with these cutlets. Try it !!!
     



Preparation Time: 15 minutes
Cooking Time: 30 minutes


Ingredients:
  • Boiled Potatoes - 3 medium (peeled & mashed)
  • Beetroot - 1/2 cup grated
  • Carrot - 1/3 cup grated 
  • French beans - 1/3 cup chopped finely
  • Corn - 3 tbsp 
  • Peas - 3 tbsp
  • Ginger Green Chilli -1/2 tsp crushed
  • Coriander leaves chopped finely
  • Red chili powder - 1/3 tsp  
  • Garam masala - 1/2 tsp
  • Cumin Seeds Powder - 1/3 tsp
  • Roasted Peanut Powder - 1 & 1/2 tbsp.
  • Salt to taste
  • Corn flour - 1 tbsp.
  • Oil
  • Semolina - 2 tbsp
  • Chaat masala


Method:
  • Microwave grated carrots, grated beetroot, chopped French beans, corn & peas each separately for 40 - 45 seconds.
  • Heat 1 tbsp. oil in a pan.
  • Add ginger chili crushed. Sauté for 30 - 40 seconds.
  • Add finely chopped French beans to it. Sauté for a minute.
  • Now add grated beetroot & grated carrot. Sauté for another minute.
  • Add corn, green peas, red chili powder, garam masala, 1 tbsp. chaat masala, cumin seeds powder & roasted peanut powder. Stir well. Sauté for 2 - 3 minutes. If the veggies are uncooked cook more for another minute or so.
  • Remove this mixture in a plate.
  • To this add  mashed potatoes & 1 tbsp. corn flour. Mix well. Check for salt. (Havn't added any salt except chaat masala but chaat masala contains salt. So add salt accordingly).
  • Now make small balls from this mixture & flatten them in your palms to give it a tikki like shape. Dust each tikki in semolina. Set aside. Do this with the rest of the mixture.
  • Now heat a flat pan. Add 1 tbsp. oil in it. Roast each tikki/cutlet in this pan till golden from both sides.
Tips:
  • You can use aamchur powder instead of chaat masala.
  • Before shaping into cutlets, do check for seasoning.
  • Chaat Masala contains salt. So don't add too much salt if using chaat masala.
  • Use any veggies of your choice.
  • You can give any shape to the tikkis/cutlet.
