Khandvi


        Everyone enjoys khandvi. But making khandvi is a tedious task. You have to continuously stir it while making the batter. But here is my recipe of making it in a microwave. One more advantage of making it in a microwave is the batter doesn't get wasted because of sticking to the pan. Also not much pain of cleaning the microwave bowl !!!




Preparation Time: 5 minutes
Cooking Time: 20 minutes


Ingredients:
  • Gram Flour 1 cup
  • Yoghurt 1 cup
  • Water 1 cup
  • Turmeric Powder 1/2 tsp
  • Asafetida a pinch
  • Salt to taste
  • green chili - ginger paste 1 tsp
  • Seasoning:
    • Oil 4 tsp
    • Mustard Seeds 1 tsp
    • Asafetida apinch
    • Green Chillies 2 chopped
    • Curry leaves 8 - 10
    • Grated Coconut 1 tbsp
    • Coriander Leaves finely chopped
Method:
  • Mix Gram Flour, Yogurt, Water, Turmeric Powder, Green Chili-Ginger paste, Salt and Asafetida in a microwave safe bowl. Blend into a smooth paste.
  • Microwave it for 6-7 minutes. Remove it in between from microwave after every 11/2 minutes & stir.
  • You can use a hand blender to remove lumps if any.
  • Prepare a surface to spread the batter. You may use aluminium foil or bottom of a aluminium plate or a clean surface of your kitchen top for spreading according to your comfort level.
  • Spoon batter along one edge of the surface and with a flat spatula, gently pull the batter down along the surface (spreading it thin).Repeat until all batter is thinly spread on the surface.
  • Let the spread batter rest for 5 minutes and allow it to solidify.
  • With a sharp knife, cut long 1 to 1 1/2 inch strips in the solid batter.
  • Gently lift the edge and roll the strip into a tight roll. You can make the rolls as big as you like. If they get too thick, cut it off and start a new roll. Repeat rolling and placing rolls on a platter.
  • Heat Oil. Add Mustard Seeds, allow them to pop. Add Asafetida, Green Chilies & curry leaves. Switch off heat. Spread it over the prepared khandvis.
  • Garnish it with finely chopped coriander leaves & fresh scraped coconut..
  • Serve at room temperature with spicy green chutney.
Tips:
  • If you don’t have a microwave, make khandvi batter in a heavy non stick pan.
  • If you feel the batter has cooled down while spreading on a surface, you can microwave it for few seconds just to warm it up & spread it immediately.
