Carrot Fudge (Barfi)


                Carrot Fudge !! You can also call it Carrot barfi. Its basically carrot halwa. A twist to the traditional Carrot Halwa !! Enjoy it !!






Ingredients:
  • Grated Carrots - 2 cups
  • Milk - 2 cup
  • Sugar - 1 cup
  • 1 tsp Cardamom Powder
  • Almonds & Pistachios for garnishing
  • 2 tsp ghee
  • Milk Powder 2 tbsp
Method:
  • Wash, peel & grate the carrots.
  • In a heavy bottomed non stick pan, boil Milk on a medium flame till it is reduced to half.
  • Heat ghee in another pan
  • Add grated carrots to it.
  • Cook the carrots on medium flame for 5 mins.
  • Add sugar & let it cook on medium flame till the sugar melts & carrots become soft.
  • Add the reduced milk to the pan of carrots. Keep cooking till the carrots mixture thickens.
  • Add cardamom powder & milk powder to it.
  • Cook it until all the moisture evaporates from the mixture.
  • Grease a tray with ghee & add the misture to it. Garnish it with pistachios & almonds.  Let it cool down completely. Cut into desired shapes.
Tips:
  • Keep stirring while making carrot fudge.
