Idli Upma

Hello friends !!

          Wondering what to do of the leftover idlis ?? Hmmmm... I have an idea. Why not try idli upma ? Ready in just 10 minutes & also not a hassle for preparation of the same. The ingredients are always there in our kitchen.
 
         So lets see how its made.

 



Preparation Time: 5 minutes
Cooking Time: 7 - 8 minutes

Ingredients:
  • 8-10 leftover Idlis diced
  • small onion sliced
  • half capsicum sliced
  • 1 small carrot sliced
  • 3 green chilies chopped
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • Curry leaves
  • Asafetida
  • salt to taste
  • 1 tbsp Oil
  • 1/2 tsp red chili powder
  • chopped coriander leaves for garnishing
Method:
  • Chop the ingredients in the shape you desire.
  • Heat oil in a wok.
  • Add mustard seeds. When they splutter, add cumin seeds, green chilies, asafetida & curry leaves.
  • Add sliced capsicum (I add capsicum first since it takes more time to cook). After a minute add sliced onions & sliced carrots. Cook for 2-3 minutes. Don't cook it fully. We want the crunch of the vegetables.
  • Add the red chili powder & salt to it. & cook it for 30 seconds.
  • Add the diced idlis & sprinkle some water (jst 1 tbsp).
  • Cover & cook on low - medium for 3-4 minutes. Stir in between to avoid sticking of the food to the bottom of the pan.
  • Garnish with coriander leaves.
Tips:
  • You can reduce the amount of chilies. I like it spicy so I used 3 of them.
  • While adding salt just remember idlis contain salt, so add salt just enough for the veggies.
  • Sprinkle water since leftover idlis are dried out. If using fresh idlis skip adding water.
